Crawfish meets roasted corn in this irresistible crispy appetizer.  These Crawfish Corn Beignets (or fritters) are only made better when paired with the mustard remoulade.

Key Ingredients

Crawfish

Roasted Corn

Black Pepper Gravy

Mustard Remoulade

Smoked Paprika

Onion & Garlic Powder

- STEP 1 -

Make the Mustard Remoulade: Combine all the ingredients in a small bowl and then chill in the refrigerator until the beignets are fried.

- STEP 2 -

Make Pepper Gravy: Melt butter in a saucepan then whisk in flour followed by milk and fresh cracked black pepper.

- STEP 3 -

Make Beignet Batter: In a saucepan with melted butter add dry ingredients and stir.  Add corn and gravy. Remove from heat and add egg and crawfish.

- STEP 4 -

Fry Beignets: In a large pot or Dutch oven heat oil. Scoop 2 tablespoons of beignet batter into hot oil and fry until deep golden brown.

- STEP 5 -

Serve Warm: Crawfish Corn Beignets should be served warm with a side of mustard remoulade.
