Crepes with Berries and Whipped Cream

These easy-to-make blender Crepes are filled with homemade whipped cream and berries. It is perfect for breakfast or brunch.

Key Ingredients

All-Purpose Flour

Eggs

Milk

Butter

Sugar

Fresh Berries

Heavy Whipping Cream

- STEP 1 -

Blend the Crepe Batter: Combine crepe batter ingredients in a blender and blend for 10 seconds.  Transfer to a medium bowl and refrigerator for at least 30 minutes.

- STEP 2 -

Make the Whipped Cream: In a chilled bowl beat together heavy cream, vanilla, and sugar until soft peaks form.  Cover and refrigerate.

- STEP 3 -

Prepare Berry Filling: Combine fresh berries, sugar, lemon zest, and lemon juice in a pan and cook over medium heat, stirring often.

- STEP 4 -

Cook the Crepes: In a non-stick pan over medium heat and coated with butter pour 1/4 cup crepe batter in the center of the pan and swirl to spread evenly.  Cook for 2 minutes then flip.  

- STEP 5 -

Fill the Crepes: Fill 1/2 of the crepe with whipped cream and berries.  Fold in half then in half again.  Top with powder sugar, more berries, and whipped cream.
