The perfect start to the day is this easy 30 minute Mexican breakfast casserole! Eggs, chorizo, peppers, and potatoes combine for a delicious one-pan dish that's bursting with flavor.

- STEP 1 -

Cook the Chorizo: Remove the chorizo from its casing and cook it in a large cast iron skillet over medium heat.

- STEP 2 -

Cook the Onions and Potatoes: Cook the onions and then the potatoes in the same skillet, including a tablespoon of olive oil if there isn’t enough chorizo grease after sautéing the onions. Cook the potatoes until they are golden brown and crispy.

- STEP 3 -

Cook the Eggs: Add everything back to the pan, mixing well to combine. Make 4 holes in the chorizo-potato mixture and crack one egg into each well or hole you created.  Cook covered until eggs are done then top with cheese.
