Fig, Brie, and Prosciutto Crepes

These Fig, Brie, and Prosciutto Crêpes are light and airy with a combination of sweet and salty. The soft crêpes pair deliciously with the fresh sliced figs, creamy brie, and crispy prosciutto. These crêpes are decadent but simple and are a perfect brunch dish.

Key Ingredients

All-Purpose Flour

Eggs

Milk

Butter

Sugar

Fresh Figs

Brie

Prosciutto

- STEP 1 -

Blend the Crepe Batter: Combine crepe batter ingredients in a blender and blend for 10 seconds.  Transfer to a medium bowl and refrigerator for at least 30 minutes.

- STEP 2 -

Cook the Crepes: In a non-stick pan over medium heat and coated with butter pour 1/4 cup crepe batter in the center of the pan and swirl to spread evenly.  Cook for 2 minutes then flip.  

- STEP 3 -

Fry the Prosciutto: Brown  sliced prosciutto for about 3-4 minutes or until it becomes crispy. Remove from heat and set aside.

- STEP 4 -

Assembly: Lay a crêpe flat and top with brie slices, slices of fig, and crispy prosciutto. Fold the crêpe in half then in quarters and place it on a serving plate.
