Brining the Chicken: Pat dry the chicken thighs and cut them in half. Combine buttermilk, hot sauce, spices, and chicken thighs. Refrigerate for at least two hours.
Dredge the Chicken: Make the hot seasoned flour. Drain excess buttermilk brine from thighs then dredge both sides in the flour mixture. Set on a wire rack and allow to rest while oil heats up.
