Shouldn't every day be Taco Tuesday? Spicy, saucy, and simple red chile chicken street tacos

chicken thighs guajillo and ancho chiles chicken stock apple cider vinegar Mexican oregano tortillas spices
Cook Time: 40 MINS
Roast the chiles for approximately 1-2 minutes then simmer for 10 minutes with chicken broth and apple cider vinegar. Add spices and chiles to blender and blend until smooth.
Place chicken and top with chile sauce. Cook for 40-45 minutes until shreddable with a fork.
Heat tortillas and then fill with red chile chicken and top with cilantro, cojita cheese, and red onion.
