Chicken Salad Tostadas

  • 1 Large Bowl

Ingredients  

  • 2 cups cooked chicken, chopped or shredded
  • ½ cup black beans, rinsed and drained
  • ½ cup roasted corn
  • ½ cup cherry tomatoes, choppped
  • ¼ cup red onions, diced
  • 1 tablespoon pickled jalapeños, diced
  • 1 tablespoon lime juice, freshly squeezed
  • 1 cup Greek yogurt
  • 1 small avocado, diced
  • 2 teaspoon taco seasoning
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 8 tostada shells

Instructions 

  • In a large bowl add the chicken, black beans, corn, tomatoes, red onion, jalapeños, lime juice, Greek yogurt, avocado, taco seasoning, salt, and pepper. Toss everything together to combine.
  • Serve on tostada shells with additional avocado, lime, and cilantro, if desired.
