Brie and Apple Grilled Cheese

Ingredients  

  • 2 slices sourdough bread
  • 1 tablespoon unsalted butter, softened
  • 2 ounce brie, thinly sliced
  • ½ green apple, thinly sliced
  • 1 tablespoon fig jam, optional

Instructions 

  • Heat a 12-inch nonstick skillet or cast-iron griddle over medium-low heat.
  • Generously butter one side of each slice of bread. Spread fig jam on the other side of each slice of bread. Layer the brie and apple slices on one slice of bread and then top with the other slice of bread.
  • Place sandwich butter side down in the preheated skillet.
  • Cook for 3-4 minutes on each side or until the bread has browned and the brie has melted. Serve warm.

Notes

1. Cook your grilled cheese on medium-low. If the skillet is too hot your bread will brown before the cheese has a chance to melt.
2. The rind around the brie can be eaten but you can remove it if you prefer.
