Preheat oven to 350 degrees. Cut bread into 1-inch cubes and toss with olive oil, salt, and pepper. Spread on a baking sheet in an even layer and bake for 12 to 15 minutes, tossing halfway through, until golden and crisp. Remove and let cool.
Cut tomatoes into bite-sized pieces and add them to a colander or fine mesh strainer set over a small bowl. Season generously with salt, toss to combine, and let drain for 15 minutes.
In a small bowl, whisk together olive oil, balsamic vinegar, honey, Dijon, and garlic. Season with salt and pepper.
Add toasted bread and drained tomatoes to a large bowl. Pour dressing over bread and tomatoes, then toss to coat. Let rest at room temperature for 20 minutes to allow the bread to absorb the dressing and tomato juices.
Add basil and arugula, then toss gently. Transfer to a serving platter and top with torn burrata. Drizzle with olive oil and finish with salt and black pepper.
