Ingredients  

Cinnamon Filling

  • cup brown sugar, plus 2 tablespoons
  • 2 tablespoons brown sugar
  • 2 ½ tablespoons all-purpose flour
  • 1 ¼ teaspoons ground cinnamon

Streusel Topping

  • ½ cup all-purpose flour
  • cup brown sugar
  • 1 ¼ teaspoons ground cinnamon
  • teaspoon kosher salt
  • 4 tablespoons unsalted butter, diced

Muffins

  • 1 ½ cups all-purpose flour
  • 1 ¼ teaspoons baking powder
  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ¼ cup brown sugar
  • 2 large eggs, room temperature
  • cup sour cream, plus 2 teaspoons
  • 2 teaspoons sour cream
  • 1 ¼ teaspoons vanilla extract

Optional Glaze

  • 10 tablespoons powdered sugar
  • 1 ¼ tablespoons whole milk
  • ¼ teaspoon vanilla extract

Instructions 

  • Preheat the oven to 350℉ and line a 12-cup muffin tin with paper liners.

Cinnamon Filling

  • In a small bowl, whisk together the brown sugar, flour, and cinnamon. Set aside.

Streusel Topping

  • In a medium bowl, whisk together the flour, brown sugar, cinnamon, and salt. Add the cold diced butter and use your fingers or the tines of a fork to press and crumble the butter into the dry mixture until it resembles wet sand.
  • Squeeze a handful together, then break it apart into larger pieces for bigger crumbles. Set aside in the refrigerator to keep the butter cold.

Muffins

  • In a medium bowl, whisk together the flour, baking powder, and salt.
  • In a large mixing bowl or the bowl of a stand mixer fitted with the paddle attachment, beat the butter, granulated sugar, and brown sugar on medium speed until light and fluffy, about 3 minutes.
  • Add the eggs one at a time, beating well between each addition. Scrape down the bowl, then add the sour cream and vanilla, and mix on low speed until combined. Scrape down the bowl.
  • Add the dry mixture to the wet mixture and beat on low speed until just combined, then use a spatula to scrape the bowl down and mix in any stray bits.
  • Spoon about half of the batter evenly into the prepared muffin cups, filling each about a third of the way. Sprinkle the cinnamon filling evenly over the batter in each cup. Top with the remaining batter, dividing evenly and covering the filling completely, so the tins are about two-thirds full.
  • Sprinkle the streusel topping generously over each muffin, gently pressing it down so it adheres.
  • Bake for 22 to 24 minutes, until a toothpick inserted in the center comes out clean. Let the muffins cool in the pan for at least 10 minutes before transferring to a cooling rack.
  • If making the glaze, whisk together the powdered sugar, milk, and vanilla in a small bowl until smooth. Drizzle over the muffins once cooled.
