Mandarin Orange Chicken Salad

Ingredients  

Dressing

  • 3 tablespoons sesame oil
  • 4 tablespoons freshly squeezed orange juice
  • 3 tablespoons rice vinegar
  • 2 tablespoons soy sauce
  • 2 teaspoons honey
  • 1 clove garlic, finely minced
  • 1 teaspoon fresh ginger, grated
  • Kosher salt and black pepper to taste

Salad

  • 2½ cups napa cabbage, shredded
  • 1½ cups red cabbage, shredded
  • 1 cup matchstick carrots
  • 2 cups rotisserie chicken, shredded
  • 2 fresh mandarins, peeled and segmented
  • ¼ cup green onions, sliced
  • ¼ cup fresh cilantro, roughly chopped
  • 3 tablespoons slivered almonds
  • 1 cup chow mein noodles

Instructions 

  • Add sesame oil, orange juice, rice vinegar, soy sauce, honey, garlic, and ginger to a bowl and whisk until combined. Season with salt and pepper to taste. Set aside.
  • Add napa cabbage, red cabbage, carrots, chicken, mandarins, green onions, and cilantro to a large bowl and toss to combine.
  • Pour dressing over the salad and toss to coat.
  • Top with slivered almonds and chow mein noodles and serve immediately.
