2cupsrolled oats
3 ½cupswater
1pinchkosher salt
2teaspoonsground cinnamon
1teaspoonground nutmeg
½teaspoonground allspice
1 ½tablespoonsbrown sugar
1teaspoonunsalted butter
chopped walnuts or pecans,optional
Instructions
Apple Pie Filling
In a saucepan over medium heat, melt 1 tablespoon of butter.
Add the diced apples, 1 tablespoon brown sugar, 1 tablespoon sugar, 1 teaspoon cinnamon, 1/4 teaspoon nutmeg, and lemon juice. Stir to coat the apples.
Cook for 8 to 10 minutes, stirring occasionally, until the apples are soft but still hold their shape. Remove from heat and set aside.
Oatmeal
In a large saucepan, bring water along with a pinch of kosher salt to a boil over medium-high heat.
Add the oats and reduce the heat to medium. Cook for 5-6 minutes, stirring occasionally.
Add 2 teaspoons of cinnamon, 1 teaspoon of nutmeg, ½ teaspoon of allspice, 1 1/2 tablespoons of brown sugar, and 1 teaspoon of butter to the oatmeal, then reduce the heat to low. Stir to combine, then cook for an additional 5 minutes or until the oats are tender. Stir in half the apple pie mixture.
Remove the oatmeal from the heat and divide into bowls.
Top each bowl with the cooked apples and chopped walnuts or pecans. Serve immediately.
