Watermelon Goat Cheese Salad

Ingredients  

  • 2 cups seedless watermelon, cubed
  • cup English cucumber, sliced
  • cup crumbled goat cheese
  • 1 cup arugula
  • ¼ cup mint leaves, chopped
  • cup red onion, thinly sliced
  • 1 ½ tablespoons olive oil
  • 2 tablespoons lemon juice
  • balsamic glaze
  • kosher salt and pepper, to taste

Instructions 

  • Optional Step: Season watermelon cubes with 1-2 teaspoons of kosher salt and toss to combine. Transfer watermelon to a fine-mesh strainer or colander set over a bowl and allow to drain for 20 to 30 minutes. Discard liquid.
  • In a large bowl, gently toss the watermelon cubes, cucumber, goat cheese, arugula, mint leaves, and red onion until evenly mixed.
  • Drizzle the olive oil, balsamic glaze, and lemon juice over the salad.
  • Season with salt and pepper to taste. Toss and serve.
