Blackened Fish Tacos

Ingredients  

Blackening Seasoning

  • 1 tablespoon smoked paprika
  • 2 teaspoons ancho chile powder
  • teaspoons garlic powder
  • teaspoons onion powder
  • ½ teaspoon black pepper
  • ½ teaspoon kosher salt

Tacos

  • pounds cod fillets, cut into pieces
  • 3 tablespoons unsalted butter
  • 2 cups bagged slaw mix
  • 6 corn tortillas, warmed
  • 1 avocado, sliced
  • 4 radishes, thinly sliced
  • ¼ cup fresh cilantro
  • lime-cilantro dressing, for drizzling
  • lime wedges, for serving

Instructions 

  • In a small bowl, whisk together all blackening seasoning ingredients. Leftover seasoning can be stored in an airtight container for up to 3 months.
  • Pat the cod dry with paper towels, then place it in a baking dish and season both sides generously with the blackening seasoning.
  • Melt the butter in a cast-iron skillet over medium-high heat. Once the butter is foamy, add the fish in a single layer, cooking in batches if needed. Cook for 3 to 4 minutes per side until deeply browned and the fish flakes easily.
  • Gently flake the fish into large chunks. Fill each warm corn tortilla with a scoop of slaw mix, a few chunks of blackened fish, and slices of avocado. Garnish with radishes and cilantro, drizzle with lime-cilantro dressing, and serve with lime wedges.
