Our dinners run the gamut from quick pasta nights to dishes that need a little more attention.
We cook a lot of Italian food simply because we love it. When we need dinner quickly, Pasta Carbonara usually wins since it cooks fast and doesn’t require much planning. Other nights, we reach for Rigatoni al Forno, Bucatini Cacio e Pepe, or Gnocchi with Asparagus in Lemon Cream Sauce when we want something a little more comforting.
Living in Texas means Tex-Mex is a common dinner choice. Hatch Green Chile Chicken Quesadillas, Shrimp Tacos with Mango Salsa, and New Mexico Hatch Green Chile Chicken Enchiladas are in regular rotation, especially when we’re craving bolder flavors. In the warmer months, we spend more time outside with recipes like Mexican Marinated Beef Fajitas or Carne Asada.
Weekend dinners give us the time for recipes like Beef Osso Buco, Braised Duck Leg, or Dutch Oven Pulled Pork.
