Mexican and Tex-Mex cooking is a big part of how we eat at home. Carne Asada Street Tacos, Shrimp Tacos with Mango Salsa, and Sheet Pan Nachos Supreme are regulars, usually with Homemade Tortilla Chips and Spicy Pico de Gallo on the table. Hatch Queso and Tex-Mex Queso tend to disappear fast, especially during College Football season.
For weekend breakfast we love making Migas con Huevo or a Mexican Breakfast Skillet. When we want something more substantial for dinner we make a big batch of Pozole Verde or Hatch Green Chile Chicken Enchiladas. Can’t for get the margaritas. We love a traditional margarita but can’t pass-up a refreshing Strawberry Margarita, a Mangonada Margarita, or a Michelada on a warm afternoon.
