Homemade Apple Pie Filling

As a kid, I often found myself in the kitchen with my Nana, especially when baking pies. She was a master at it, always making everything from scratch. That’s where my love for making scratch-made recipes began. The aroma of apples, cinnamon, and brown sugar simmering on the stove is a memory I’ll never forget. I still use her simple recipe, whether for a classic apple pie or our mini puff pastry apple pies. It just tastes like home. And let me tell you, there’s nothing quite like a warm spoonful of this filling on top of a scoop of vanilla ice cream!

Key Ingredients and Substitutions

To make homemade apple pie filling, you need only some pantry staples: your favorite apples, fall spices, sugar, butter, and cornstarch.

In the printable recipe below, you can find a complete list of ingredients and measurements.

  • Apples: Granny Smith apples are a go-to for apple pie filling. They’re tart and hold their shape well during baking, balancing the sweetness nicely. If you prefer, Honeycrisp or Fuji apples work, too, though they’ll make your pie a bit sweeter.  You can also use a combo of Granny Smith with your favorite red apple.
  • Sugars: We’re using a combination of brown and white sugar. The brown sugar adds a subtle caramel note that complements the apples. If you’re out of brown sugar, you can use all white sugar, but you’ll miss some of that deeper flavor.
  • Butter: A bit of butter adds richness to the filling and helps the apples caramelize as they cook.
  • Lemon Juice: This ingredient prevents the apples from browning and adds a touch of brightness to balance the sweetness.
  • Spices: Cinnamon is a must for apple pie in my kitchen. I also like adding a pinch of nutmeg. It’s optional but enhances the overall flavor.
  • Cornstarch: This thickens the filling to just the right consistency. If you don’t have cornstarch, arrowroot powder is a good substitute. The goal is a nicely thickened filling that is not too runny.

How to Make Homemade Apple Pie Filling

Here are the quick, step-by-step instructions with visuals; you can find the full instructions, including the exact ingredients, in the recipe card below.

Pro-tip: For the best texture, let the apple pie filling cool completely before using it in your pie crust or turnovers. This ensures the filling sets properly and doesn’t make the crust soggy.

1. Cooking the Apples: Melt the butter in a saucepan over medium heat, then add the diced apples, light brown sugar, cinnamon, nutmeg, and a splash of fresh lemon juice. Stir well to coat the apples evenly, then cook for about 8-10 minutes until they are tender but still hold their shape.

2. Thickening the Filling: Stir in the cornstarch and cook for another 1-2 minutes until the apple mixture thickens to a rich, smooth consistency.

3. Cooling and Storing: Remove from heat and let the apple filling cool to room temperature. Use it in pies, hand pies, or store it in a jar for later.

Ways to Use Apple Pie Filling

This filling is delicious on its own or as a topping on a scoop of vanilla ice cream, but there are many other ways to enjoy it. Here are some of my favorite ideas:

  • Spoon it over your morning oatmeal or yogurt for a special breakfast treat.
  • Top pancakes or waffles with it for a cozy weekend brunch.
  • Make a quick apple crisp by adding a simple crumble topping and baking until golden.
  • Use it as a filling for homemade hand pies, mini puff pastry pies, or turnovers.
  • Try something different and make apple pie egg rolls – they’re reminiscent of those old-school fried apple pies and so good!
  • For a fun twist, use it to fill apple pie tacos with crispy cinnamon-sugar shells.
  • Make easy apple pie roll-ups by wrapping the filling in pastry and rolling in cinnamon sugar before baking.
  • Try two-ingredient apple pie dumplings using store-bought crescent roll dough for a super simple dessert.

This filling is versatile, so feel free to get creative with how you use it!

Pro Tip for Pie Making: If you’re using this filling for a traditional apple pie, let it cool completely before adding it to your pie crust. This extra step may take more time, but it’s worth it. Cooling the filling helps keep the butter in your pie crust cold until it hits the oven, which is key for achieving that light, flaky crust we all love. Trust me, your pie will thank you for the patience!

Make-Ahead and Storage

Make-Ahead: You can make the apple pie filling in advance. Store it in an airtight container in the fridge for up to 5 days. If freezing, place the cooled filling in a freezer-safe container for up to 3 months.

How to Store: Allow the filling to cool to room temperature before refrigerating. Keep it in an airtight container for up to 5 days.

How to Reheat: Reheat the filling over medium heat, stirring occasionally. If it becomes too thick, add a splash of water or apple juice.

Recipe Tips and Notes

  • Cook over medium heat. This ensures your apples soften evenly without burning or turning to mush. Stir occasionally for consistent cooking.
  • Don’t skip the lemon juice. A splash of fresh lemon juice not only prevents browning but also adds a bright note that enhances the apple flavor.
  • Consider using apple cider. Try replacing some of the water with apple cider or unsweetened apple juice for a more intense apple flavor.
  • Make extra and freeze. This filling freezes beautifully, so consider making a double batch. It’s perfect for future pies or quick weeknight desserts.
